Bon Appetit !!

Inspired by the "Shrimp Wrapped in Julienned Potato" that I tried during the farewell dinner in Korea, I've decided to be a little creative taking advantage of extra day of resting at home. As we've all tried, one time or another, several variety of appetizers using bacon as a wrapping media, this was the first time that I saw potato being used for the wrapping. I tried put a little spin to the conventional appetizers, and created a light lunch. Since seeing is believing, photographs are presented. As you can see,the recipe is very straight forward, however, if you need recipe, I can prepare one. The menu consist of Bacon-Wrapped Enoki, Bacon/Potato-Wrapped Scallop, and Avocado Salsa.

As Rachel Ray said a good meal does not have to be complicated, I tried to to this in less than 30 minutes as she does on her TV show. As I am not on TV show, it took more than 30 minutes to prepare this simple meal....it actually took about an hour(including time for photographs along the way).
